Hi Dave, I just completed that same project on our 2003 Dufour 40 Performance this winter, I used mini wax spar urethane satin gloss and it was a very good match to the original interior, sanding the rough areas took some time but final finish is a very close match and should last awhile. I used three thin coats with a day between coats in most areas and did it off the boat inside the house. I learned most of the interiors are sprayed on by he factory. Good luck
